Sunflower Kale Salad
Description
This is my favorite salad and has amazing nutritious benefits!

Some consider kale bitter. I'm not going to argue, yes it can be for some. The secret to eating it, prepare it with oils and spices! You can pair kale with other greens such as collard greens which have a slightly sweeter flavor. If collard greens is the only green in your fridge, you can make this salad just the same.

Kale is a superfood and studies suggest that it helps the liver neutralize potentially cancerous substances. Kale is packed with beta-carotene, an important nutrient for good vision. It is an excellent source of Vitamin C, which is great for cold prevention and reducing the risk of colon cancer.

Serves: 8
Ingredients
2 bunches kale
1/4 C Seasame oil
2/3 C Sunflower seeds, roasted
3 TBS Tamari or Braggs aminio acid

* For Pitta use ghee or coconut oil
**Kale can be substituted for collard greens
Directions
Remove stems from kale, wash and chop the leaves.

Roast sunflower seeds in a warm, dry pan until lightly browned. Put aside.

Warm oil in a saucepan, add in kale. Sauté until kale is coated with oil. Add sunflower seeds and tamari. Stir to coat.

Serve warm!
